A rare steak should only be cooked to 125 degrees Fahrenheit, which will result in a steak that's charred on the outside but still cool and red on the inside. However, because it doesn't require much time over your heat source, it's easy to overcook a rare steak so it's no longer rare. But by sticking a meat thermometer into the thickest part of the steak (being sure not to touch the bone, if there is one), you can keep an eye on your steak's doneness and pull it from the heat as soon as it's ready.
